- BUTTERFLIED LEG OF LAMB

- 1 (5 TO 6 LB) Leg of lamb boned
- and butterflied
- bruised fresh mint leaves
- 1 cup olive oil
- coarsely ground black pepper
- 2 cloves garlic, minced
- 3/4 cup red wine
- juice of 2 lemons

- Marinate lamb 2 hours or more in a mixture of mint, oil, pepper, garlic,
- wine and lemon juice. Broil uncovered over hot coals as for steak for 45
- minutes, or to desired degree of doneness, turning once or twice. From
- time to time baste with marinade. Slice on the bias.
